These cauliflower & quinoa bites are deliciously tasty and packed with vegetarian proteins.
Grating the cauliflower (you can use florets and stalks so that you do not waste anything) with a cheese grater gives it a rice-like consistency that binds beautifully with the eggs to a soft and moist texture. There is no need for flour which is perfect for anyone on a gluten-free diet.
Quick and easy to make, these bites are perfect for lunch, as a light dinner. Kids will also love them in their lunch boxes as they can be eaten warm or at room temperature.
They are so versatile I would not hesitate to serve them when entertaining or even as a Christmas / Thanksgiving appetiser or finger food.

Not to be missed this weekend! @mr_organic and teamed up with @thecanvascafee1 , 42 Hanbury St, London, E1 5JL for a vegan café pop-up that has no prices. Every guest is invited to ‘Pay What They Can’ with every penny donated to support Rhythms of Life’s Christmas campaign.
@rhythmsoflife is a local homeless charity that provides food around London 365 days a year to help those most in need. Mr Organic had its first office in the back of an artist studio in Brick Lane so it is nice to see it giving back to the community that embraced them all those years ago.
I am a big fan of Mr Organic’s products not only because of their quality and amazing taste but also because of their ethics and purpose centered around Positivity, People and Planet.
Founded in 2009, Mr Organic went fully vegan in 2016 and now has a range of over 100 plant-based and organic products ranging from pasta, tomato sauces, pesto, rice, ketchup, egg-free mayo, olive oils, flatbreads, grissini, biscuits, chocolate spreads, antipasti and the list goes on.
Most products are farmed and produced in Italy by their long-time farmers. Quality, taste and ethics… What else can you ask for?
We got to sample the food last night (and even got a gnocchi masterclass) at the launch of “Pay What You Can” café and let me tell you… it is amazing (with a special mention for the breaded artichokes and the sourdough bruschetta).
The Italian-inspired menu highlights Mr Organic’s Italian roots including delicious warm sit down along with grab-and-go treats such as a sharing board of Aubergine Dip, Grissini Breadsticks, Sundried Tomato Hummus and Warm Focaccia; Breaded Artichokes; Caponata with Tomatoes; Sourdough Bruschetta; Arancini and Salame di Chocolato and more.

The aubergine is my weekly veg box was just calling for my fragrant cauliflower and aubergine curry. Spiced with garam masala and other delicious flavours, this is a mild curry dish but you can add chilli powder or fresh chilli if you prefer something spicier.
I added some raisins for a touch of sweetness. It makes great leftovers the next day as the flavours will have had even more time to develop.
