This creamy blueberry porridge is flavoured with cinnamon and nutmeg and makes a scrumptious breakfast that you can enjoy with a variety of toppings. Here I have used almond butter, maple syrup, shelled hemp seeds and chopped almonds.
This is a recipe that you can make at any time of the year as it uses frozen blueberries. Once the blueberries are stewed in lemon juice and sugar, they get a gorgeous deep red-purple glow that looks spectacular.
Cinnamon and nutmeg are both warming spices, adding to the overall comfort feel of this warm bowl of blueberry porridge.
Another breakfast favourite made with frozen blueberries is my fluffy vegan blueberry buttermilk pancakes below which are topped with a blueberry and lemon coulis.

Got up early this morning, my body still (nicely) aching from yesterday’s Power Yoga session with @realTravisEliot on YouTube. (Graham and I have also been doing his Yin classes… highly recommend his channel). Found some blueberries in the freezer, so decided to make my fluffy vegan Blueberry Buttermilk Pancakes. Loaded with fruits and topped with a blueberry and lemon coulis, they are a big favourite in our house. No eggs needed as they are made with ground chia seeds instead (you can swap for ground flax seeds, or 2 mashed overripe bananas)⠀ ⠀ Super excited as one of my friends managed to get a delivery slot at @ShiptonMill so we are getting some flour which gave me another perfect excuse for pancakes this morning! If you have issues finding flour check out this article from Sustain (https://buff.ly/2VBXELK)⠀ Recipe link in my bio. Have a great Sunday everyone!⠀ ⠀ #vegan #flexitarian #yoga #flour #pancakes #eggfree #sunday #breakfast #brunch #instafood #veganfood
