Bursting with flavours this stir-fried cauliflower rice with sticky tofu, makes a healthy and gluten-free vegan meal.

Serve it with extra vegetables and added sprinkles of sesame seeds and red chillies. So so good!

The tofu and cauliflower rice are pan-fried while the rest of the vegetables are steamed.

Cauliflower rice is a low carb alternative to grains or pasta. It is quite straightforward to make. You can use a food processor but it is as easy to make with a cheese grater (see instructions in the recipe method below).

How to make this stir-fried cauliflower rice with sticky tofu recipe

The first step is to press the tofu for around 20 minutes to extract as much water as possible. You can use a tofu press or wrap the tofu in a clean towel and press it between 2 plates by securely placing something heavy on top.

While the tofu is being pressed, you can then prepare the rest of the ingredients.

Make the sticky sauce next and leave it on the side while you prepare the rest of the vegetables.

I am using carrots, baby corn and mangetout but you can pretty much use any vegetable you like (stir-fried pak choi or beansprouts, steamed green beans etc…).

Once the tofu is pressed, cut it in dice and pan-fry it until golden all over.

While the tofu is cooking, you can prepare the cauliflower rice. Discard the green leaves of the cauliflower and grate the whole cauliflower head (florets and stalks) with the coarse side of a cheese grater.

Stir-fry the cauliflower in a separate pan.

When the tofu is done, add the sticky sauce to the pan. Mix the sauce and tofu together until the tofu dice are coated all over with the sauce.

To serve, place the cauliflower rice on a large serving plate. Top with the sticky tofu, cooked carrot, baby corn, mangetout, sesame seeds and fresh chillies. Enjoy!!

Ingredients
 
 

FOR THE TOFU:

  • 400 g extra-firm tofu (pressed and cubed)
  • 4 Tbsp cornflour
  • 3 Tbsp sesame oil

FOR THE STICKY SAUCE:

  • 2 Tbsp soy sauce or tamari
  • 1 Tbsp sesame oil
  • 3 Tbsp tomato purée
  • 3 Tbsp brown sugar
  • 1 Tbsp rice vinegar
  • ½ tsp dry crushed chillies
  • 2 tsp freshly grated ginger
  • 1 large garlic clove (grated)
  • 2 Tbsp lime juice

FOR THE CAULIFLOWER RICE:

  • 350 g trimmed cauliflower (around 600g / 1.32 lbs with stalks and leaves)
  • 2 Tbsp vegetable oil
  • 1 large garlic clove (grated)

ADDITIONAL VEGETABLES:

  • 1 large carrot
  • 50 g baby corn
  • 50 g mangetout

TO SERVE:

  • fresh chillies
  • sesame seeds
  • soy sauce or tamari

Instructions
 

  • Press the tofu for around 20 minutes to extract as much water as possible. You can use a tofu press or wrap the tofu in a clean towel and press it between 2 plates by securely placing something heavy on top.
  • While you are pressing the tofu, make the sticky sauce. Mix all the ingredients of the sticky sauce in a medium bowl and set aside.
  • Peel the carrot and cut it into thin sticks. Set aside with the baby corn and mangetout.
  • Once you have pressed the tofu, discard the extra liquid and cut the tofu block in 2cm [0.8 inches] dice.
  • Place the tofu cubes in a bowl and toss gently in 4 tablespoons of cornflour until the tofu dice are covered all-over.
  • Heat 3 tablespoons of sesame oil in a large frying pan. Add the tofu dice and cook under medium to high heat until they are fried and golden all-over.
  • While the tofu is cooking, you can prepare the cauliflower rice.
  • Discard the green leaves of the cauliflower. With the coarse side of a cheese grater, grate the whole cauliflower head (florets and stalks). Set aside.
  • When the tofu is nearly done, heat 2 tablespoons of vegetable oil into a frying pan. Add cauliflower rice and finely grated garlic clove. Fry gently for 5-8 mins.
  • Heat some water in a separate saucepan. When the water is boiling, add the carrot, baby corn and mangetout. Cook for around 5 mins until done.
  • When the tofu is done, add the sticky sauce to the pan. Mix the sauce and tofu together until the tofu dice are coated all over with the sauce. Cook for 2 minutes or so.
  • Place cauliflower rice on a large serving plate. Top with the sticky tofu, cooked carrot, baby corn and mangetout. Add a sprinkle of sesame seeds.
  • Serve with extra red chillies and soy sauce if desired.

Bursting with flavours this Garlic & Tomato Pasta makes a delicious and easy summer dish that is perfect for this hot weather. You can serve it slightly warm or at room temperature. It is also scrumptious the next day as a cold leftover.

This is an old family recipe that back home we call Pâtes à l’ail. Growing up, my Sicilian great-aunt (yes I am a 1/4 Italian in case you did not know 😉) would make it for us in the summer when tomatoes are at their best. 

Like any recipe that has been passed down through generations, creating a written version of it, involved quite a few phone calls between my mum and one of our cousins. Everyone in the family makes this Garlic & Tomato Pasta from memory, adding their own twist and using approximate quantities of ingredients. My version is even more different as I have added cannellini beans for protein.
