  • 150 g cashews
  • 200 ml water
  • 1/2 tsp salt
  • juice of 1 lemon - to taste


  • Place cashews in a bowl. Cover with water. Set aside to soak for 4hrs to overnight.
  • Drain cashews. Place in a blender with 200ml water [US 3/4 cup]. Blend until smooth. Add lemon juice, and salt to taste.


  • add nutritional yeast + 1 garlic clove (for cheesy flavour), sriracha or hot sauce + 1 garlic clove (for something spicier), maple syrup (for something sweeter as an alternative to whipped cream) etc...
