  • 600 g cherries
  • 300 g silken tofu
  • 50 g dairy free butter + extra for greasing
  • 250 ml almond milk
  • 1 tsp vanilla extract
  • 75 g golden caster sugar
  • 1 tsp baking powder
  • 100 g plain flour
  • 1/4 tsp salt
  • icing sugar - optional


  • Preheat the oven to 200C/390F/Gas 6.
  • Grease an oven proof dish (26cm / 10 inch diameter).
  • Melt the butter in a pan.
  • Drain the tofu. Place it in a blender with the almond milk. Whizz for 10- 20 seconds until you have a smooth liquid.
  • Pour the mixture into a bowl. Mix in the melted butter, vanilla extract, sugar, baking powder, salt and sieved flour.
  • Wash the cherries. Remove the stalks. Pit the cherries if desired.
  • Place the cherries at the bottom of the greased ovenproof dish.
  • Carefully pour the tofu mixture on top.
  • Cook in the oven for 35-45 mins. The top should be golden and set.
  • Top with a dusting of icing sugar if desired.
  • Can be eaten slightly warm or cold.
