I am delighted to be once again a Finalist in PETA’s Great Vegan Bake-Off competition with this Double Chocolate Cake.
My journey into vegan baking started only just over one year ago. I was very skeptical at first that you could bake cakes without eggs or dairy.
A fantastic little book The Complete Guide to Vegan Food Substitutions made all the difference by simply explaining how to switch to cruelty-free ingredients. I also use PETA’s vegan baking cheat sheet. The experience has been fun and amazing.
People often turn to vegan baking because of concerns about the environment or animal cruelty. Yet vegan baking can also be a lifeline for both mothers whose kids have dairy or egg allergies and people trying to lower their cholesterol. I now recommend to everyone to try vegan cakes as they can be as delicious as non-vegan ones.
