New potatoes are one of the first crop of Spring. Young and tender, they have a smooth and creamy taste. They are not in season for very long (April – July), so don’t delay feasting on them! In the UK, we are very lucky as we can also enjoy the unique flavour of Jersey Royal New Potatoes.
New potatoes are particularly well suited for salads making perfect side dishes for lunch boxes, picnics, barbecues.
Herbs, mustards, sharp cheeses, shallots, salad leaves, capers partner well with mayonnaise, vinaigrette, cream and yoghurt to give new potato salads a bit of a zing.
Some of my favourite pairings include tarragon, mint, capers, rocket with a tangy Dijon vinaigrette. What is your favourite?
