Cauliflower might be a humble vegetable, yet it is full of delicious surprises such as cauliflower rice. Easy, healthy and gluten free, cauliflower rice makes a tasty and low carb alternative to rice, couscous or other grains. It is made by simply grating cauliflower florets or pulsing them in a food processor.
Some people like to blanch cauliflower rice, personally I am happy to eat it raw. It is so versatile you can pretty much do what you want with it: salads, stir fries, pizza crusts, fried “rice” etc..
