Ahead of the official start of Spring, here is a brand new meat free meal plan. I have three brand new recipes on the blog, a vegan Curried Chickpea Sandwich, a vegan Chocolate Mocha Mousse and some vegetarian Sweet Chili Beetroot & Ricotta Filo Tarts. This last recipe was created by the talented Dan Doherty from Duck and Waffle as part as the Love Beetroot campaign.
The sandwich and the mousse are my latest Food Waste Duo recipes re-using the chickpea brine from lunch to make a scrumptious dessert.
