Courgettes are a very versatile vegetable, yet until a few years ago I would only eat them cooked. Little did I know that a raw courgette salad was to become one of my staple Summer lunches.
There is currently a glut of courgettes in the allotment next door, so much so that one of the gardeners was handing some out in the streets last night. Look out for a new recipe soon!
In the UK, courgettes are in season from June to October. Growing your own is easy (we keep ours in plant pots on the patio) and will enable you to enjoy different varieties ranging from pale green, dark green or even yellow. The mix of colours looks so pretty on a plate. Courgettes have delightful yellow flowers which are not only beautiful to look at but also delicious to eat. Stuffed courgette flowers with ricotta is a personal favourite which I discovered on our third wedding anniversary in Rome. Heaven!
Courgette can be eaten raw or cooked and prepared in different ways such as spiralising, grating or slicing. It pairs well with different herbs, miso, cheese, nuts and seeds.
