Tofu recipes are as versatile as can be!

The secret of unleashing tofu’s greatness is in its preparation and/or cooking. Firm tofu has to be pressed first to extract as much water from it as possible. Pressing tofu is vital to allow it to absorb marinades or any flavour of the dish.

My first tofu pressing experience involved a plate, a chopping board and a kettle filled with water. A precarious game of Jenga which of course ended up in disaster when it all came crashing down.
