Rachel has worked in the kitchens of Marco Pierre White, Heston Blumenthal and Peter Gordon. She has been writing on food issues for over a decade and was Commissioning Editor of Waitrose Food Illustrated for five years.

Passionate about seasonal, local and organic food, Rachel is currently the Food Editor for the organic box scheme Abel & Cole, where she writes weekly seasonal recipes. She has been featured in The Guardian, The Evening Standard, BBC London, BBC Breakfast and more commenting on food issues. She also writes for Jellied Eel magazine.

A true advocate of sustainability Rachel de Thample is also the author of Less Meat More Veg: The eco-friendly way to eat, with 150 inspiring recipes a must for any flexitarian kitchen.

Her upcoming Foraging & Urban Ingredients Course at Divertimenti  is all about gathering and growing amazing ingredients – things hard to buy and wonderful in the kitchen like dandelions, oak bark, lime leaf buds, chickweed, ground elder, Jack-by-the-Hedge and more.

Spring is the perfect time to get started and it’s actually Rachel’s most favourite time of the year to forage as everything is just starting to wake up.

On the course, you’ll be taken out to local green spaces to gather things and take them back to the kitchen to play with. You’ll make a wild pesto to fill little Arancini, Dandelion honey, wild cocktails and more.

You’ll also be shown some brilliant things you can grow in your own kitchen. Students will get a mini selection of seeds and be planting up a few things to take home, along with a goodie bag of good things to eat.

More about Rachel de Thample: Rachel  lives in South London where she has helped set up various food & growing projects, including an award-winning Edible Garden in her local park, Tipsy Garden in her local pub (where hops, apples and grapes are grown for local brews), and popular ‘Jam Sessions’ which nurture the art of preserving. She is currently writing her second book (Ebury; due Spring 2015).
