There is no better way to immerse yourself into vegetarian cooking than a residential holiday course, let alone one taking place in sunny, warm and scrumptious Italy.

Come and join the Vegetarian Cookery School for a sunshine filled cooking week in Apulia, the undiscovered heel of southern Italy, staying in the magnificent Palazzo Bacile di Castiglione, surrounded by ancient olive trees, citrus groves and figs, with fantastic vegetable markets, close to the sea and unspoilt villages.

This six day (sunday to saturday) residential vegetarian cooking course will give you the opportunity to learn the wonderful vegetable cooking of Apulia with Rachel Demuth and Elisa Tamburini, an expert on all things Italian.

Vegetarian chef Rachel Demuth is the owner of Demuths Restaurant in Bath which was my first experience of vegetarian dining. Rachel Demuth has been pioneering creative, healthy and unpretentious vegetarian food for over 25 years. And here is your chance to learn with her in this fantastic vegetarian cooking holiday course.

On the course you will cook every day with a combination of hands on cookery and demonstration where you will create delicious Italian meals together using the best seasonal vegetables, local oils and wines.

You will shop for vegetables at the local Poggiardo market, visit local cheese and olive oil producers and have a special wine tasting with Franceso Winspeare at Castle di Salve. You will have an evening out at an excellent Agrotourism restaurant and a visit to Otranto, a lovely town on the coast with an amazing “tree of life’ mosaic which covers the entire floor of the cathedral.

To make the most of the Autumn sunshine, there will be time to relax and unwind, swim in the Palazzo pool, a dip in the sea, cycle or walk through the olive groves.
