Achieving the “perfect cluster” (something I have become obsessed with over the past few weeks) can be a challenge. For all ingredients to stick together adding some “flour” (here ground oats) is essential. When you toast the granola make sure you mix it gently to keep clusters together (you can always break them later if needed). I also found that leaving the granola to dry afterwards in the oven (as you do with meringue) does improve both the cluster and crunch.
Feel free to mix the seeds of your choice. Also golden syrup can be replaced by honey if you are not concerned by making it vegan. This recipe is labelled as gluten-free yet anyone with a gluten allergy should make sure the oats they use are gluten-free (and free from cross-contamination).
