Almond Butter [vegan] [gluten free]

Almond butter has become a staple breakfast food. I love it on fruits, toasts, cereals, porridge etc.. It is great as snack too when stuffed in dates or added to energy balls etc…

Making your own almond butter is easy. All you need is a food processor or a blender. The more powerful appliance you use, the smoother your nut butter will be.

You will need to keep whizzing the almonds in the blender (or food processor) for at least 20-35 mins. Once in the blender (or food processor) the almonds go through a “sticky paste” phase. Be patient, it will start warming up as the oil from the nuts is released and transform itself into a smooth thick creamy butter. You might need to stop the blender (or food processor) a few times to scrape the sides.

This recipe makes one jar as per the picture above.
