Artichokes with Caramelised Shallots Vinaigrette [vegan]

Artichokes Vinaigrette is the ultimate slow finger food. The artichoke is peeled leaf by leaf to reveal its tender heart. Each leaf contains a small amount of soft and delicious pulp. When you reach the heart make sure you remove the “choke” which is the fluffy part covering it. While artichokes might look like grown up food, kids love the taste too!

You can eat artichokes hot or cold. If you have a pressure cooker then they should be ready in 12-15 mins. Serve them with a vinaigrette (here I chose to make a caramelised shallots vinaigrette but they are also delicious with plain vinaigrette, balsamic vinaigrette, basil vinaigrette . . . ) or dip.
