This is a delicious noodle dish with sautéed mushrooms, kale and cashew cream.
If you are not bothered with making it vegan you can substitute the cashew cream with regular cream. However, I would encourage anyone to make it with cashew cream because this is very very yummy.
Soba noodles have a tendency to get sticky so it is important not to overcook them and to also rinse them in cold water after you cooked them. I also add a little olive oil to keep them from clinging together.
