I discovered tofu scramble over the Summer and loved it instantly. I have never been a fan of scrambled eggs in the morning but tofu scramble hits the spot every time. Here I added some tomatoes and thyme to give it a Mediterranean feel.
These French tofu scramble tartines make a perfect healthy, high protein vegan breakfast or lunch with no cholesterol in sight. The turmeric adds some yellowish colour to the tofu while the nutritional yeast (high in vitamins B and protein) adds a some nutty, cheesy flavour. You can buy nutritional yeast in health stores (I use Marigold’s Engevita).
