300g chopped kale [UK 10.5oz / US 4 cups firmly packed]
200g crumbled feta cheese [UK 7oz / US 1 ¼ cup]
1 medium onion (finely chopped)
2 garlic cloves (crushed)
4 medium organic eggs
2 Tbsp fresh parsley leaves (chopped)
8-10 Filo pastry sheets

Preheat the oven to 180°C/350°F/Gas 4.
Heat some olive oil is a large frying pan. Cook onion and garlic until soft.
Add chopped kale (hard stalks removed) and cook until soft around 10 mins.
In a separate bowl mix together eggs and feta cheese.
Once the kale is cooked, remove from heat. Blend in egg and feta mixture. Add chopped parsley. Mix well and put on the side.
Oil the bottom of a 23cm (9 inch) round pie dish. Layer 4-6 sheets of filo pastry at the bottom (brush some oil between each one). Make sure you leave some dough hanging out so you can fold it over the pie.
Add kale and spread evenly. Fold dough in.
Add 4 filo sheets on top of the pie (brushing oil between each one as you go). Tuck dough inside the pie dish.
