I first tried matcha ice cream on a trip to Japan. The green colour was a bit of a surprise at first, but once I tried it I really enjoyed the unusual taste.
If you have a sweet tooth you might want to add more maple syrup, personally I prefer it not too sweet. I use 3 teaspoons of very good quality matcha in this recipe so it is quite intense. If you are not sure how strong you like it, just use less.
