Salade Niçoise is a typical salad from South of France. This is a vegan version without eggs, tuna or anchovies.
You can make it ahead so it is nice and fresh when you serve it. It is a complete meal on its own so I usually do not bother doing anything else!
As I am unable to find traditional “Olives de Nice” in the UK, I use Moroccan dry black olives which have a lovely strong flavour. Feel free to substitute them with black olives.
