The potatoes are first boiled in water, then pan-fried. The sausages are cooked with onion, garlic, red pepper, spinach and thyme. This recipe comes together easily in around 45mins and is seasoned with fresh lemon juice and parsley.

You can swap the spinach for kale if you like, making sure you remove the hard stalks first.
