Stuffed Dates & Prunes [vegan] [gluten free]

This Stuffed Dates & Prunes recipe is adapted from one of my quintessential childhood Christmas memories “Fruits Déguisés” (ie dried fruits stuffed with marzipan) . We made them every year to snack on around the Christmas tree.

Nowadays I much prefer replacing the marzipan with nut butter. It is not as sweet and much more delicious. However, it is a little bit more fiddly as nut butter is generally runnier than marzipan. When making these, I like to use a mix nut butter and walnuts.

These are so good, it would be  shame to enjoy them just at Christmas.  They make yummy mid-morning or afternoon snacks as well as post workout treats.

You can use any nut butter for this. My favourite is this homemade Cashew & Date Nut Butter which I make without additional sugar or flavour.

Just make sure you keep the nut butter in the fridge the night before so it is hard and easier to work with. Also once you have stuffed the dates and prunes, it is a good idea to keep them in the fridge until you are ready to serve.
