Marrows are flooding farm shops right now. Because they are so big it is sometimes tricky to decide what to do with them.
Here they make a thrifty seasonal mid-week dinner stuffed with giant couscous and organic lean beef.
You can find giant couscous in most supermarkets. The grain is much bigger than regular couscous but it cooks very quickly and adds variety to your grain cupboard.
