These vegan sweet potato pancakes have a lovely light orange complexion and are fantastic with either sweet or savoury fillings. You will not taste the sweet potato at all.
It is worth investing in a good quality pancake pan as it will cook your pancakes evenly and they will be easier to flip. Make sure the pan is well greased before you cook each pancake. Don’t be in a hurry, it is better to wait than one side is well cook before flipping the pancake, otherwise you will end up with a wrinkled and heavy pancake.
