These vegan banana pancakes are always a huge hit at home. They require little topping as they already contain banana, maple syrup and rum (if you wish). Perfect to use some overripe bananas you might have laying around.
You can eat them as is or add chocolate, caramel, fresh fruits or simply whatever takes your fancy. Because of the bananas, these tend to be thicker than regular French crêpes.
Here I have added some spelt flour but you can replace it with some plain flour. The rum is optional but adds a nice touch for adults!
If the batter is lumpy simply whizz it in a blender for 30 seconds.
It is worth investing in a good quality pancake pan as it will cook your pancakes evenly and they will be easier to flip. Make sure the pan is well greased before you cook each pancake. Don’t be in a hurry, it is better to wait than one side is well cook before flipping the pancake, otherwise you will end up with a wrinkled and heavy pancake.
This recipe makes 10-12 pancakes.
