Greek Lentil Salad [vegetarian]

In the Summer I could live solely on Greek salad. I wanted to add some proteins so I came up with an alternative. This vegetarian Greek lentil salad makes a protein packed lunch or dinner. Easy and straightforward it can be ready under 30 mins.

I love the tanginess  of xeres (sherry) vinegar but if you do not have it balsamic vinegar will do.  Don’t forget the pitta bread!
