Ingredients
 
 

  • 50 g butter
  • 2 Tbsp olive oil
  • 400 g yellow onions
  • 400 g red onions
  • 3 garlic cloves grated
  • 1 tsp granulated sugar
  • 250 ml dry white wine
  • 1.25 litre beef stock (I used Oxo Meat-Free Beef Stock)
  • 4 Tbsp chopped parsley

FOR THE CROUTONS

  • day-old baguette

  • 1 garlic clove peeled
  • grated cheddar cheese

Instructions
 

  • Melt butter and oil in a large stockpot
    50 g butter, 2 Tbsp olive oil
  • Add the onions, garlic and sugar. Stir until everything is well combined.Cook under low-medium heat until the onions are completely soft and start to caramelised, about 30 to 35 minutes.

  • Add the wine and stock.
    250 ml dry white wine, 1.25 litre beef stock
  • Bring to the boil. Then simmer, covered for 20 minutes.
  • In the meantime, make the croutons: Preheat the oven to 200°C/400°F. Cut the bread into slices and spread the slices on a baking tray lined with parchment paper.

  • Brush the croutons with olive oil on both sides and bake in the oven until golden, about 10 to 12 minutes.

  • When the croutons are done, leave them to cool down so you can handle them and rub the garlic clove on both sides of each crouton.

  • Preheat the grill on high.
  • Ladle the soup in individual bowls. Top each bowl with croutons and grated cheese.

  • Place the bowls under the grill, and cook until the cheese has melted.
  • Top with chopped parsley and serve.
