"No Duck" Hoisin Jackfruit Wraps [vegan]

Sometimes the simplest recipes are often the best! This is certainly the case for these “no duck” hoisin jackfruit wraps. Such a tasty lunch or light dinner that takes only 15 minutes to make.

Ingredients
 
 

FOR THE SAUCE:

  • 3 Tbsp black bean sauce
  • 2 Tbsp dark soy sauce
  • 2 Tbsp dark brown sugar
  • 1 Tbsp rice vinegar
  • 1 garlic clove grated
  • 1 tsp Chinese 5-spice
  • 3/4 tsp chilli powder
  • 2 tsp sesame oil

FOR THE WRAPS:

  • 400 g can jackfruit
  • 6 mini-wraps or Chinese pancakes

TO SERVE:

  • 1/2 cucumber
  • 3-4 spring onions
  • chopped salad
  • sesame seeds - optional
  • coriander leaves - optional

Instructions
 

  • Heat all the sauce ingredients in a pan. Break down drained jackfruit into medium chunks and add to the pan. Cook together under medium heat for 5 to 8 mins.
  • Serve cooked jackfruit on mini-wraps or Chinese pancakes topped with sliced cucumber, chopped spring onions, chopped salad, sesame seeds and chopped coriander leaves.
