Vegetarian Sausage Casserole

Cooked in a rich and smoky tomato sauce, this one-pot vegetarian sausage casserole is one of our family favourite comfort meals.

Ingredients
 
 

  • 8 vegetarian sausages
  • olive oil
  • 1 red onion
  • 1 large red pepper
  • 2 garlic cloves crushed
  • 1 1/2 tsp smoked paprika
  • 2 Tbsp sun-dried tomato paste
  • 800 g chopped canned tomatoes
  • 800 g canned cannellini beans
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 2 tsp sugar optional

TO SERVE:

  • small bunch of fresh parsley
  • Mashed potatoes

Instructions
 

  • Heat some olive oil in a large casserole. Gently fry the sausages until slightly brown.
  • Add finely sliced red onion, sliced red pepper, crushed garlic, smoked paprika and sun-dried tomato paste. Fry all together for another 3 minutes.
  • Add chopped tomatoes, drained cannellini beans, thyme and oregano to the casserole.
  • Cook for 10 mins covered, then 10 mins uncovered until red pepper is soft.
  • Season to taste (if the canned tomatoes are too acidic, you can add some sugar to balance it out).
  • Serve with mashed potatoes with chopped parsley on top.
