Beetroot Hummus Sandwich [vegan]

I have created the following Beetroot Hummus Sandwich for Hovis as a quick lunch option to have with their Wholemeal bread. Make the hummus ahead, stick it in the fridge and enjoy during the week!​

Equipment

  • Food Processor
  • julienne cutter or sharp knife

Ingredients
 
 

  • 400 g can chickpeas​
  • 250 g cooked beetroot​
  • 4 Tbsp lemon juice​
  • 2 garlic cloves​
  • 1 Tbsp tahini​
  • 1 tsp ground cumin​
  • 1 tsp ground coriander​
  • 3/4 tsp salt​
  • 30 g walnuts​
  • 10 mint leaves​

SANDWICH FILLING (for 1 sandwich)​

  • 2 slices of Hovis Wholemeal bread​
  • ¼ carrot​
  • ½ avocado​
  • 2 slices of red pepper​
  • small handful of watercress​
  • small handful of micro-green sprouts​

Instructions
 

  • Put all the ingredients of the beetroot hummus in a food processor and blend until smooth.​
  • Spread hummus on 1 slice of Hovis Wholemeal bread. Add finely cut carrot (you can use a julienne cutter if easier), followed by sliced avocado, red pepper, watercress and micro-green sprouts. Top with another slice of bread. Enjoy!
