Festive Granola [vegan] [gluten free]

This homemade festive granola packs all the Christmas flavours in one bowl: orange, cranberries, cinnamon, ginger, hazelnut and cocoa nibs!

  • 200 g rolled oats
  • 100 g rolled oats
  • 2 tsp ground cinnamon
  • 2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 100 g hazelnuts
  • 1 tsp vanilla extract
  • 4 Tbsp maple syrup
  • Zest of 2 oranges
  • 75 ml melted coconut oil
  • 2 handful sunflower seeds
  • ½ tsp salt
  • 75 g dried cranberries
  • 75 g dried cherries
  • 90 g cocoa nibs


  • Preheat the oven at 180ºC/Fan 160ºC/ 350ºF/gas 4.
  • Grind 100g of rolled oats to flour.
  • In a large mixing bowl, mix together oat flour, remaining rolled oats, cinnamon, ginger, cloves, hazelnuts, vanilla extract, maple syrup, orange zests, melted coconut oil, sunflower seeds and salt.
  • Tip the granola onto a large baking tray lined with a baking sheet. Spread evenly.
  • Bake for 15 mins. Mix & spread the granola a little bit more. Bake for another 10 depending on how crunchy you want it (the longer in the oven, the crunchier). Mix and spread again. Switch off the oven and leave granola to "dry" inside for 2 hours or so.
  • When done, mix cranberries, cherries and cocoa nibs in granola. Store in an airtight container.
