Roasted Swede, Kale and Black Eyed Peas with Smoked Paprika [vegan] [gluten free]

large frying pan
can black eyed peas
large handful kale - shredded - hard stalk removed
medium red onion
garlic cloves - crushed
lemon juice + extra for serving
smoked paprika + extra for serving
handfuls chopped parsley leaves
salt & pepper
Cut the red onion into thin wedges. Peel the swede and cut in long sticks shape (similar to medium thin French fries).
Heat some olive oil in a large frying pan. Add the onion wedges, crushed garlic and smoked paprika. Fry for 2 minutes.
Add the swede sticks. Mix well until they are coated with oil all over.
Cover and cook under medium heat for around 15 mins until just soft. Make sure you stir the vegetables from time to time so they do not burn.
Once the swede is ready, add kale. Fry for 3 mins.
Drain the black eye peas and rinse well.
Add the black eyed peas to the vegetables. Cook for another 2 mins until warm.
Season to taste with lemon, salt & pepper.
Sprinkle parsley on top.
Serve straight away with additional lemon juice and smoked paprika on top if desired.
