Air Fryer Asparagus Recipe (with Hazelnut Gremolata)

Crispy on the outside and tender inside, these air-fryer asparagus make a quick and easy spring dish. They can be served as a light lunch, appetiser, or side.

Ingredients
 
 

  • 250 g asparagus
  • olive oil

FOR THE HAZELNUT GREMOLATA

  • 15 g parsley
  • zest of 1 unwaxed lemon
  • 1 garlic clove grated
  • 4 to 6 Tbsp extra-virgin olive oil to taste
  • 20 g hazelnut
  • salt to taste

Instructions
 

  • Snap off the woody ends of the asparagus and discard them.

  • Scatter the asparagus in the air-fryer basket.Drizzle some olive oil on top.

  • Cook at 200°C (400°F) for around 7 to 10 minutes depending on size.
  • In the meantime, make the gremolata: chop the parsley finely. Place it in a bowl and mix in the lemon zest and crushed garlic. Whisk in the olive oil. Season to taste with salt.

  • Dry toast the hazelnuts in a pan. When done, chop them roughly and set aside.

  • Place the roasted asparagus on a serving plate. Top with the gremolata, chopped hazelnuts, and serve.
