Ingredients
 
 

  • 200 g jumbo rolled oats
  • 45g light brown sugar
  • 2 Tbsp chia seeds
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 500 ml milk of choice
  • 3 Tbsp neutral vegetable oil or virgin coconut oil melted plus more for greasing
  • 11/2 tsp vanilla extract
  • 400 g apple
  • 150 g blackberry + extra for topping
  • 30 g walnuts roughly chopped

TO SERVE:

  • vanilla yoghurt

Instructions
 

  • Preheat the oven to 180°C (350°F) and grease a 23cm (9-inch) square baking dish with oil.
  • In a large bowl, stir together the oats, sugar, chia seeds, baking powder, cinnamon, and salt.
    200 g jumbo rolled oats, 45g light brown sugar, 2 Tbsp chia seeds, 1 tsp baking powder, 1 tsp ground cinnamon, 1/2 tsp salt
  • In a medium bowl, whisk together the milk, oil, and vanilla until well combined.
    500 ml milk, 11/2 tsp vanilla extract, 3 Tbsp neutral vegetable oil or virgin coconut oil melted
  • Add the wet ingredients to the dry and mix with a wooden spoon until well combined. Leave to rest for 5 minutes.
  • Peel, core and dice the apples.
    400 g apple
  • Spread apples and blackberries in the prepared baking dish.
    150 g blackberry
  • Pour the oatmeal mixture over the fruits and spread evenly. Scatter some extra blackberries on top.
  • Bake for 15 minutes.
  • Scatter the walnuts on top of the oatmeal and bake for an additional 15 to 20 minutes, until the top is crisp and golden and the oatmeal is completely set.
    30 g walnuts
  • Let cool for at least 10 minutes, then serve warm or at room temperature with vanilla yoghurt on the side.
