Apple Turnover Recipe

Made with puff pastry and filled with homemade stewed apples, these apple turnovers are perfect for breakfast, dessert, or any time you're craving something sweet.

Ingredients
 
 

  • 350 g apple peeled, cored, and diced
  • 1/4 to 1/2 tsp ground cinnamon
  • 3-4 Tbsp sugar (see note 1)
  • 2 Tbsp water (or more if needed)
  • 320 g puff pastry

FOR THE VEGAN EGG WASH: (See note 2 for substitution)

  • 1 Tbsp dairy-free butter melted
  • 1 tsp dairy-free milk
  • 1 tsp maple syrup

Instructions
 

  • Heat the apples in a small saucepan over medium heat. Mix in the cinnamon and 2 Tbsp of water.

  • Stirring often, stew the apples until they are completely soft. Add sugar and water as needed, until you have your desired sweetness and consistency.
    3-4 Tbsp sugar
  • Remove the pan from the heat and leave the stewed apples to cool down completely.
  • Preheat the oven to 200°C/400°F.
  • Layout the cold puff pastry on a baking tray lined with parchment paper. Cut the pastry sheet into 6 equal squares.

  • Place 2 tablespoons of stewed apples to one side of each square, leaving 1.25cm (1/2 inch) border all around.
  • Fold the empty side of each square to form triangles.
  • Press the pastry to seal the borders of each apple turnover. Crimp the borders together using your fingers, a fork, or both.
  • Make the egg wash: Mix together the melted dairy-free butter, milk, and maple syrup.

  • Brush the top of the apple turnovers with egg wash.
  • Bake in the oven for 20 to 25 minutes until golden all over.
  • Leave to cool down on a wire rack before eating.

Notes

Note 1: the amount of sugar will vary according to the sweetness of the apples you are using. 
Note 2: instead of the vegan egg wash you can use
  • A regular egg wash: beat 1 egg and 1 tablespoon of  water or milk.
  • Milk + sugar: brush each turnover with milk and dust with granulated sugar.
