Filled with homemade stewed apples lightly spiced with cinnamon, these apple turnovers are a delicious and flaky puff pastry treat that you can enjoy for breakfast, dessert, or any time you’re craving something sweet.
This is a quick and easy recipe. The apples are simply stewed with cinnamon and water. Because our garden apples are a little sharp, I am also adding sugar but you do not have to, especially if you are using sweet apples. Instead of stewed apples, you can also use my apple compote with no refined sugar as a filling.
TOP TIPS: The only steps where you need to be careful is when filling and sealing the apple turnovers.
- First, you do not want to add too much stewed apples (2 tablespoons is about right) otherwise they will spread over when you are folding the pastry.
- Second, make sure you seal the pastry well. As shown in the video below, I press the edges together, then fold them over, before pressing them with a fork again. This prevents the stewed apples from spreading outside while the apple turnovers are cooking.

Growing up I used to love apple turnovers (or as they are known in France “chaussons aux pommes”). This version looks a bit different from the ones I used to eat as a child. Chaussons aux pommes have a semi-oval shape similar to Cornish pasties and require a special cutter that I do not have. So, I decided to go for a triangular shape for this recipe. Less pastry waste in the end which is always a good thing!

How to make these apple turnovers
Ingredients needed:
To make these apple turnovers you will need:
- apples
- cinnamon
- sugar (optional)
- water
- puff pastry
For the vegan egg wash (or see note 2 for substitutions)
- dairy-free butter
- dairy-free milk
- maple syrup
Step 1: Stew the apples
Heat the apples in a small saucepan over medium heat. Mix in the cinnamon and 2 Tbsp of water. Stirring often, stew the apples until they are completely soft. Add sugar and water as needed, until you have your desired sweetness and consistency.
Remove the pan from the heat and leave the stewed apples to cool down completely.
Step 2: Prepare the pastry
Layout the cold puff pastry on a baking tray lined with parchment paper. Cut the pastry sheet into 6 equal squares.
Step 3: Fill & shape the apple turnovers
Place 2 tablespoons of stewed apples to one side of each square, leaving 1.25cm (1/2 inch) border all around. Make sure not to overfill the pastry.
Fold the empty side of each square to form triangles. Press the pastry to seal the borders of each apple turnover. Crimp the borders together using your fingers, a fork, or both.
Step 4: Brush the apple turnovers with egg wash
Mix together the dairy-free butter, milk, and maple syrup. Brush the top of the apple turnovers with egg wash.
Step 5: Bake and serve
Bake in the oven for 20 to 25 minutes until golden all over. Leave to cool down on a wire rack before eating.
Common questions about these apple turnovers
Once baked these apple turnovers can be stored in an airtight container at room temperature for 1 to 2 days, or in the fridge for up to 4 days. They tend to lose their crispness over time.
These apple turnovers are perfectly delicious on their own (this is the way I prefer to eat them!). However, you can also enjoy them with ice cream, whipped cream, clotted cream, or caramel sauce.

- A regular egg wash: beat 1 egg and 1 tablespoon of water or milk.
