Ingredients
 
 

  • 2 ripe avocados
  • 1 large mango
  • 400 g can black beans
  • 1 small red onion
  • juice of 1 lime
  • 1 garlic clove - crushed
  • 1/2 tsp of salt
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp ground coriander
  • 1 Tbsp cider vinegar
  • 1/2 small red chilli - to taste
  • 4-5 Tbsp of chopped fresh coriander
  • additional salt & pepper to taste

Instructions
 

  • Press garlic clove and 1/2 tsp of salt to a paste. Place in a small bowl. Mix in olive oil, ground coriander and cider vinegar. Set aside.

  • Rinse black beans. Drain well and place in a salad bowl.

  • Cut red onion into small squares.

  • Peel mango. Cut into small squares.
    1 large mango
  • Cut avocados flesh into small squares.
    2 ripe avocados
  • Place diced red onion, mango and avocado in salad bowl with the black beans. Drizzle lime juice and mix well.

  • Add dressing, chopped coriander and finely sliced red chilli. Toss until well combined. Adjust seasoning if needed.
    1/2 small red chilli - to taste, 4-5 Tbsp of chopped fresh coriander, additional salt & pepper to taste
  • Eat straight away.
