Fresh and colourful, this avocado & mango black bean salad is absolutely delicious. Bursting with healthy plant-based proteins, I love eating it with tortillas chips.
Inspired by Mexican cuisine, it is bursting with flavours. Perfect in the Winter when you want to shake up the grey weather or in the Summer if you are craving something fresh.
Versatile, it makes a hearty main for lunch or a side dish for dinner. It will also brighten up buffets and barbecue tables.
Serve it on its own or as a side dish with plenty of lime and coriander. Leftovers are great for lunchboxes.

Avocado & Mango Black Bean Salad [vegan] [gluten free]

Ingredients
- 2 ripe avocados
- 1 large mango
- 400 g can black beans
- 1 small red onion
- juice of 1 lime
- 1 garlic clove – crushed
- 1/2 tsp of salt
- 2 Tbsp extra virgin olive oil
- 1/2 tsp ground coriander
- 1 Tbsp cider vinegar
- 1/2 small red chilli – to taste
- 4-5 Tbsp of chopped fresh coriander
- additional salt & pepper to taste
Instructions
- Press garlic clove and 1/2 tsp of salt to a paste. Place in a small bowl. Mix in olive oil, ground coriander and cider vinegar. Set aside.
- Rinse black beans. Drain well and place in a salad bowl.
- Cut red onion into small squares.
- Peel mango. Cut into small squares.
- Cut avocados flesh into small squares.
- Place diced red onion, mango and avocado in salad bowl with the black beans. Drizzle lime juice and mix well.
- Add dressing, chopped coriander and finely sliced red chilli. Toss until well combined. Adjust seasoning if needed.
- Eat straight away.
