Ingredients
- 2 ripe avocados
- 1 large mango
- 400 g can black beans
- 1 small red onion
- juice of 1 lime
- 1 garlic clove – crushed
- 1/2 tsp of salt
- 2 Tbsp extra virgin olive oil
- 1/2 tsp ground coriander
- 1 Tbsp cider vinegar
- 1/2 small red chilli – to taste
- 4-5 Tbsp of chopped fresh coriander
- additional salt & pepper to taste
Instructions
- Press garlic clove and 1/2 tsp of salt to a paste. Place in a small bowl. Mix in olive oil, ground coriander and cider vinegar. Set aside.1 garlic clove – crushed, 1/2 tsp of salt, 2 Tbsp extra virgin olive oil, 1/2 tsp ground coriander, 1 Tbsp cider vinegar
- Rinse black beans. Drain well and place in a salad bowl.400 g can black beans
- Cut red onion into small squares.1 small red onion
- Peel mango. Cut into small squares.1 large mango
- Cut avocados flesh into small squares.2 ripe avocados
- Place diced red onion, mango and avocado in salad bowl with the black beans. Drizzle lime juice and mix well.juice of 1 lime
- Add dressing, chopped coriander and finely sliced red chilli. Toss until well combined. Adjust seasoning if needed.1/2 small red chilli – to taste, 4-5 Tbsp of chopped fresh coriander, additional salt & pepper to taste
- Eat straight away.
