Ingredients
 
 

  • 200 g jumbo old-fashioned rolled oats
  • 45 g light brown sugar
  • 2 Tbsp chia seeds
  • 1 tsp baking powder
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 500 ml milk of choice
  • 3 Tbsp neutral vegetable oil or melted virgin coconut oil plus more for greasing
  • 11/2 tsps pure vanilla extract
  • 400 g mixed berries divided
  • 30 g almonds roughly chopped

TO SERVE:

  • Vanilla yoghurt

Instructions
 

  • Preheat the oven to 180°C (350°F) and grease a 23cm (9-inch) square baking dish with oil.
  • In a large bowl, stir together the oats, sugar, chia seeds, baking powder, ginger, and salt.

  • In a medium bowl, whisk together the milk, oil, and vanilla until well combined.
    500 ml milk of choice, 3 Tbsp neutral vegetable oil or melted virgin coconut oil, 11/2 tsps pure vanilla extract
  • Add the wet ingredients to the dry and mix with a wooden spoon until well combined. Leave the batter to rest for 5 minutes.
  • Spread ¾ the berries in the prepared baking dish.
    400 g mixed berries
  • Pour the oatmeal mixture over the fruits and spread evenly. Scatter remaining berries on top
  • Bake for 15 minutes.
  • Scatter the almonds on top of the oatmeal and bake for an additional 15 to 20 minutes, until the top is crisp and golden and the oatmeal is completely set.
    30 g almonds
  • Let cool for at least 10 minutes, then serve warm or at room temperature with vanilla yoghurt on the side.
