For ease, I am using frozen berries but fresh ones work just as well.

How To Make This Baked Berry Oatmeal
Ingredients:
To make this baked berry oatmeal you will need:
- jumbo old-fashioned rolled oats
- light brown sugar
- chia seeds
- baking powder
- ground ginger
- salt
- milk of choice
- neutral vegetable oil or melted virgin coconut oil
- pure vanilla extract
- mixed frozen berries
- almonds
- vanilla yoghurt, to serve
Step 1: Mix The Dry Ingredients

In a large bowl, stir together the oats, sugar, chia seeds, baking powder, ginger, and salt.
Step 2: Mix The Wet Ingredients

In a medium bowl, whisk together the milk, oil, and vanilla until well combined.
Step 3: Combine Together

Add the wet ingredients to the dry and mix with a wooden spoon until well combined. Leave the batter to rest for 5 minutes.
Step 4: Assemble and Bake

Spread ¾ the berries in the greased baking dish.
Pour the oatmeal mixture over the fruits and spread evenly. Scatter remaining berries on top. Bake for 15 minutes.
Scatter the almonds on top of the oatmeal and bake for an additional 15 to 20 minutes, until the top is crisp and golden and the oatmeal is completely set.
Step 5: Serve The Baked Berry Oatmeal

Let cool for at least 10 minutes, then serve warm or at room temperature with vanilla yoghurt on the side.

You can make this baked berry oatmeal the night before, cover, and refrigerate.
In the morning, just pop it in the oven, covered and reheat at 160°C (325°F) for 10 minutes or so. Alternatively, reheat individual portion in the microwave as detailed below.
Do not make the batter ahead as the oats will soak up the liquid completely and the baked oatmeal will be very dry.
Leftover Storage
Let the baked oatmeal cool completely, then store leftovers in an airtight container in the fridge for up to 4–5 days.
To reheat, warm individual portions in the microwave for 1–2 minutes or in the oven at 160°C (325°F) until heated through, add a splash of milk to keep it moist.
