Blender Muffin Recipe

This simple blender muffin recipe uses everyday ingredients, takes just five minutes to prepare, and gives you perfectly soft banana and chocolate chip muffins with almost no washing up.

Ingredients
 
 

WET INGREDIENTS:

  • 1 medium overripe banana 100g / 3.5oz of flesh or 160g/5.6 oz with peel
  • 75 ml neutral vegetable oil
  • 180 ml dairy-free milk
  • 1 tsp vanilla extract

DRY INGREDIENTS:

  • 250 g self-raising flour
  • 125 g white sugar
  • 125 g dark chocolate chips
  • 1/4 tsp salt

TOPPING:

  • 1 Tbsp white sugar
  • 1 Tbsp demerara sugar

Instructions
 

  • Preheat the oven to Fan 180°C / 200°C/400°F/Gas 6.
  • Place 12 large paper baking cases in a muffin tin.
  • Place all the wet ingredients in the bowl of a blender and whizz until smooth.
    1 medium overripe banana, 75 ml neutral vegetable oil, 180 ml dairy-free milk, 1 tsp vanilla extract
  • Add the dry ingredients and whizz for 10 seconds or so, until the ingredients are combined (do not over blend)
    250 g self-raising flour, 125 g white sugar, 125 g dark chocolate chips, 1/4 tsp salt
  • Carefully spoon the mixture into each baking case in the muffin tin.
  • Mix the white and demerara sugar together and sprinkle over each muffin.
    1 Tbsp white sugar, 1 Tbsp demerara sugar
  • Place in the oven for around 20-25mins until golden. Insert a skewer to check the muffins are cooked. The skewer should come out clean.
