How To Make These Blender Muffins

Ingredients:

To make these blender muffins, you will need:

  • 1 medium overripe banana
  • vegetable oil
  • dairy-free milk
  • vanilla extract
  • self-raising flour
  • white sugar
  • demerara sugar
  • dark chocolate chips
  • salt

Step 1: Prep the Oven and Muffin Tin

Preheat the oven to Fan 180°C / 200°C/400°F/Gas 6. Place 12 large paper baking cases in a muffin tin.

Step 2: Blend the Wet Ingredients

Place the banana, oil, milk and vanilla extract in the bowl of a blender and whizz until smooth.

Step 3: Blend the Dry Ingredients

Add the self-raising flour, white sugar, chocolate chips and salt. Whizz for 10 seconds or so, until the ingredients are combined (do not over blend)

Step 4: Spoon in the Muffin Tin

Mix 1 Tbsp of white sugar and 1 Tbsp of demerara sugar together in a small bowl and sprinkle over each muffin.

Step 5: Bake the Blender Muffins

Place the muffins in the oven for around 20-25mins until golden. Insert a skewer to check the muffins are cooked. The skewer should come out clean.

  • Blueberry blender muffins: swap chocolate chips for 100g fresh or frozen blueberries.
  • Healthy blender muffins: replace half the flour with wholemeal or spelt flour.
  • Protein blender muffins: add 2 tablespoons of protein powder.

  • Room temperature: 3–4 days in an airtight container.
  • Fridge: up to 1 week in an airtight container.

WET INGREDIENTS:

  • 1 medium overripe banana 100g / 3.5oz of flesh or 160g/5.6 oz with peel
  • 75 ml neutral vegetable oil
  • 180 ml dairy-free milk
  • 1 tsp vanilla extract

DRY INGREDIENTS:

  • 250 g self-raising flour
  • 125 g white sugar
  • 125 g dark chocolate chips
  • 1/4 tsp salt

TOPPING:

  • 1 Tbsp white sugar
  • 1 Tbsp demerara sugar
(Switch on to prevent your screen from going dark)

Instructions
 

  • Preheat the oven to Fan 180°C / 200°C/400°F/Gas 6.
  • Place 12 large paper baking cases in a muffin tin.

  • Carefully spoon the mixture into each baking case in the muffin tin.
  • Mix the white and demerara sugar together and sprinkle over each muffin.

  • Place in the oven for around 20-25mins until golden. Insert a skewer to check the muffins are cooked. The skewer should come out clean.
