Ingredients
 
 

  • 175 g frozen blueberries
  • 1 Tbsp lemon juice
  • 2 Tbsp sugar
  • 2 Tbsp water
  • 100 g rolled jumbo oats
  • 325 ml dairy-free milk
  • 1/2 tsp cinnamon
  • dash of nutmeg optional

TOPPINGS:

  • maple syrup
  • nut butter I used almond butter
  • chopped almonds
  • shelled hemp seeds optional
  • mint leaves optional

Instructions
 

  • Place frozen blueberries, lemon juice, sugar, and water in a pan. Bring to boil. Cook for 3-5 mins until the blueberries are cooked. They should be soft but still hold their shape. Set aside when done.
    175 g frozen blueberries , 1 Tbsp lemon juice, 2 Tbsp sugar, 2 Tbsp water
  • Place oats, milk, cinnamon and nutmeg (if using) in a pan. Cook under medium heat until oats are cooked and milk has been absorbed.
    100 g rolled jumbo oats , 325 ml dairy-free milk, 1/2 tsp cinnamon, dash of nutmeg
  • Share porridge evenly between two bowls. Top with stewed blueberries and toppings of your choice.
