This creamy blueberry porridge is flavoured with cinnamon and nutmeg and makes a scrumptious breakfast that you can enjoy with a variety of toppings. Here I have used almond butter, maple syrup, shelled hemp seeds and chopped almonds.
This is a recipe that you can make at any time of the year as it uses frozen blueberries. Once the blueberries are stewed in lemon juice and sugar, they get a gorgeous deep red-purple glow that looks spectacular.
Cinnamon and nutmeg are both warming spices, adding to the overall comfort feel of this warm bowl of blueberry porridge.
Beyond being delicious, this blueberry porridge is incredibly versatile. Ingredients
- 175 g frozen blueberries
- 1 Tbsp lemon juice
- 2 Tbsp sugar
- 2 Tbsp water
- 100 g rolled jumbo oats
- 325 ml dairy-free milk
- 1/2 tsp cinnamon
- dash of nutmeg optional
TOPPINGS:
- maple syrup
- nut butter I used almond butter
- chopped almonds
- shelled hemp seeds optional
- mint leaves optional
Instructions
- Place frozen blueberries, lemon juice, sugar, and water in a pan. Bring to boil. Cook for 3-5 mins until the blueberries are cooked. They should be soft but still hold their shape. Set aside when done.175 g frozen blueberries, 1 Tbsp lemon juice, 2 Tbsp sugar, 2 Tbsp water
- Place oats, milk, cinnamon and nutmeg (if using) in a pan. Cook under medium heat until oats are cooked and milk has been absorbed.100 g rolled jumbo oats, 325 ml dairy-free milk, 1/2 tsp cinnamon, dash of nutmeg
