This is a recipe that you can make at any time of the year as it uses frozen blueberries. Once the blueberries are stewed in lemon juice and sugar, they get a gorgeous deep red-purple glow that looks spectacular.
Cinnamon and nutmeg are both warming spices, adding to the overall comfort feel of this warm bowl of blueberry porridge.
Another breakfast favourite made with frozen blueberries is my fluffy vegan blueberry buttermilk pancakes which are topped with a blueberry and lemon coulis.
I hope you enjoy this blueberry porridge recipe as much as I do. If you do make it, don’t forget to tag me on Instagram!
