This easy Caprese Bruschetta is made with sweet cherry tomatoes, mozzarella, fresh basil and extra virgin olive oil on crisp garlic-rubbed baguette. A quick Italian appetiser that's perfect for summer entertaining, light lunches or sharing with friends.

Ingredients
300gmixed cherry tomatoes
2Tbspthinly chopped basil
2Tbspextra-virgin olive
salt & pepper
12slices of baguetteabout 2 cm [3/4inch] thick
olive oil
1large garlic clove
12mozzarella pearls
12basil leaves
Instructions
Cut the cherry tomatoes into small dice and place them in a bowl.
300 g mixed cherry tomatoes
Add the extra virgin olive oil and chopped basil. Season with salt and pepper, then toss everything together until well combined. Cover and leave to marinate while you prepare the bread.
Arrange the baguette slices in a single layer on a large baking tray. Brush or spray both sides generously with olive oil.
12 slices of baguette, olive oil
Bake for 8–10 minutes, turning halfway through if needed, until the bread is crisp and golden.
Remove the toasted baguette slices from the oven and rub one side of each slice with the cut side of the garlic clove while the bread is still warm.
1 large garlic clove
Spoon a generous tablespoon of the tomato mixture onto each slice, making sure to include a little of the juices, as these will soak into the bread and add extra flavour. Top each bruschetta with a mozzarella pearl and a fresh basil leaf.
12 mozzarella pearls, 12 basil leaves
Finish with a little extra salt and freshly ground black pepper, then serve immediately.
