This recipe relies on simple ingredients, so choosing the best quality you can find really makes a difference.
Mixed Cherry Tomatoes: I always use mixed cherry tomatoes rather than larger salad tomatoes. They’re naturally sweeter, have a more concentrated flavour and usually contain less excess water. Using a mixture of red, orange and yellow tomatoes also makes the finished bruschetta look even more colourful.
Extra Virgin Olive Oil: With so few ingredients, the olive oil is just as important as the tomatoes. Choose a good-quality extra virgin olive oil with plenty of flavour. As the tomatoes marinate, their juices combine with the oil and basil to create a wonderfully fresh dressing that soaks into the toasted bread.

Fresh Basil: Fresh basil adds that unmistakable Italian aroma and ties everything together beautifully.
Baguette: A crusty baguette gives you the perfect contrast between crisp toasted edges and a slightly soft centre.
Garlic: Rubbing the warm toast with a cut garlic clove gives every slice a subtle garlic flavour without overwhelming the fresh tomatoes.
Mozzarella Pearls: Mozzarella pearls are the ideal size for each bruschetta. You should easily find them in supermarkets. If not, you can simply tear larger mozzarella balls into bite-sized pieces if that’s what you have.

Step by Step Instructions
Step 1: Marinate The Tomatoes
Start by cutting the cherry tomatoes into small, even dice and placing them in a mixing bowl. Add the chopped basil, pour over the extra virgin olive oil and season generously with salt and freshly ground black pepper. Toss everything together until well coated, then leave the mixture to marinate while you prepare the bread.
Don’t rush this step. As the tomatoes sit, they release their natural juices, which combine with the olive oil, basil and seasoning to create an incredibly flavourful dressing. These juices are one of the secrets to making the very best fresh tomato bruschetta.
Step 2: Toast The Bread
Meanwhile, preheat the oven to 200°C / 180°C fan / 390°F. Arrange the baguette slices in a single layer on a baking tray and brush or spray both sides generously with olive oil. Bake for around 8 to 10 minutes, turning halfway through, until the bread is crisp and beautifully golden.
While the bread is still warm from the oven, rub one side of each slice with the cut surface of a garlic clove. The warmth helps release the garlic’s natural oils, giving the toast plenty of flavour without making it too strong.
Step 3: Assemble The Caprese Bruschettas
To assemble, spoon a generous helping of the marinated tomato mixture onto each slice of toast, making sure to include some of the delicious juices. They soak slightly into the bread, adding even more flavour while still leaving it crisp around the edges.
Finish each bruschetta with a mozzarella pearl and a fresh basil leaf before serving immediately with an extra pinch of salt and freshly ground black pepper if needed.

- Use ripe cherry tomatoes. The sweeter the tomatoes, the better the finished bruschetta.
- Don’t skip the marinating time. Allowing the tomatoes to sit for 10 to 15 minutes creates the delicious juices that make this recipe so special.

The tomato topping can be prepared several hours ahead and stored in the fridge. In fact, the flavour improves as it marinates.
