250gplain flour
1tspbaking powder
3/4tspbicarbonate of soda
½tspsalt
200gdark chocolate chips
80ggranulated sugar
125gdark brown sugar
125mlvegetable oil
1tspvanilla extract
60mlnon-dairy milk
Instructions
Preheat the oven 180°C / 350°F
Mix together the flour, baking powder, bicarbonate of soda, salt, and chocolate chips (reserving 2 tablespoons of chocolate chips for later)
250 g plain flour, 1 tsp baking powder, 3/4 tsp bicarbonate of soda, ½ tsp salt, 200 g dark chocolate chips
Mix the sugars into a bowl, making sure there is no sugar lumps. Using a hand whisk or food mixer, whisk together the sugars and vegetable oil until fluffy.
80 g granulated sugar, 125 g dark brown sugar, 125 ml vegetable oil
Mix in the vanilla extract and milk in the sugar mixture.
1 tsp vanilla extract, 60 ml non-dairy milk
Mix the wet and dry ingredients together until well combined. Do not overmix.
Spoon the dough into the skillet and flatten the top. Spread the reserved chocolate chips on top, pushing them down lightly into the dough.
Bake the chocolate chip skillet cookie for 25 to 30 minutes until golden.
Leave to cool a little before serving (if you are spooning the cookie leave to cool for 5 minutes before serving or leave to cool for 10 minutes if you are slicing it).
