  • dark brown sugar
  • vegetable oil
  • vanilla extract
  • non-dairy milk (or dairy milk for non-vegan)

Step-by-Step Recipe Instructions

Step 1: Mix the Dry Ingredients

Mix together the flour, baking powder, bicarbonate of soda, salt, and chocolate chips (reserving 2 tablespoons of chocolate chips for later).

Ingredients
 
 

  • 250 g plain flour
  • 1 tsp baking powder
  • 3/4 tsp bicarbonate of soda
  • ½ tsp salt
  • 200 g dark chocolate chips
  • 80 g granulated sugar
  • 125 g dark brown sugar
  • 125 ml vegetable oil
  • 1 tsp vanilla extract
  • 60 ml non-dairy milk
(Switch on to prevent your screen from going dark)

Instructions
 

  • Preheat the oven 180°C / 350°F
  • Mix together the flour, baking powder, bicarbonate of soda, salt, and chocolate chips (reserving 2 tablespoons of chocolate chips for later)
    250 g plain flour, 1 tsp baking powder, 3/4 tsp bicarbonate of soda, ½ tsp salt, 200 g dark chocolate chips
  • Mix the sugars into a bowl, making sure there is no sugar lumps. Using a hand whisk or food mixer, whisk together the sugars and vegetable oil until fluffy.
    80 g granulated sugar, 125 g dark brown sugar, 125 ml vegetable oil
  • Mix in the vanilla extract and milk in the sugar mixture.
    1 tsp vanilla extract, 60 ml non-dairy milk
  • Mix the wet and dry ingredients together until well combined. Do not overmix.
  • Spoon the dough into the skillet and flatten the top. Spread the reserved chocolate chips on top, pushing them down lightly into the dough.
  • Bake the chocolate chip skillet cookie for 25 to 30 minutes until golden.
  • Leave to cool a little before serving (if you are spooning the cookie leave to cool for 5 minutes before serving or leave to cool for 10 minutes if you are slicing it).
