Ingredients
  

  • 400 g canned chickpeas
  • 1 Tbsp olive oil
  • 2 tsp za'atar
  • 1/2 tsp garlic powder

FOR THE YOGHURT BASE:

  • 250 ml thick yoghurt (Skyr or Greek or dairy-free)
  • 2 Tbsp mint leaves finely chopped
  • 1 garlic clove grated
  • 1 tsp fresh lemon juice
  • 1/4 to 1/2 tsp lemon zest to taste
  • salt & pepper to taste

TO SERVE:

  • 2 Tbsp extra-virgin olive oil
  • 1 tsp za'atar
  • drizzle honey
  • pitta bread or flatbread

Instructions
 

  • Drain the chickpeas, then spread them on a clean tea towel to remove excess moisture.
    400 g canned chickpeas
  • Place the chickpeas in a small mixing bowl and mix with olive oil, za'atar and garlic powder.
    1 Tbsp olive oil, 2 tsp za'atar, 1/2 tsp garlic powder
  • Arrange the chickpeas in a single layer and place in the air-fryer.
  • Shaking the chickpeas halfway, bake for 12 to 15 mins at 200°C / 400°F until golden and crispy.
  • In the meantime, make the minty yoghurt. Mix together yoghurt, mint, garlic, lemon juice, lemon zest. Season to taste with salt and pepper.
    250 ml thick yoghurt (Skyr or Greek or dairy-free), 2 Tbsp mint leaves, 1 tsp fresh lemon juice, 1/4 to 1/2 tsp lemon zest, salt & pepper, 1 garlic clove
  • Spread the minty yoghurt on a serving dish. Scatter the air fried chickpeas on top.
  • Drizzle with olive oil, za'atar and honey.

  • Serve straight away with pitta bread or flatbread.
